Creamy Tomato Basil Soup with Grilled Cheese

Ingredients:
- 2 cups of canned crushed tomatoes
- 1 cup of vegetable broth
- 1/2 cup of heavy cream
- 1/4 cup of fresh basil leaves, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cheddar cheese
- Butter for grilling
Kitchen Tools Needed:
- Pot
- Skillet
- Blender
- Spatula
- Knife
- Cutting board
Instructions:
- In a pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add the crushed tomatoes and vegetable broth to the pot. Bring to a simmer and cook for about 10 minutes.
- Stir in the heavy cream and chopped basil. Season with salt and pepper. Blend the soup until smooth using an immersion blender or regular blender.
- For the grilled cheese, butter one side of each slice of bread. Place cheese between two slices, buttered side out.
- In a skillet, grill the sandwich over medium heat until golden brown on both sides and the cheese is melted.
- Serve the creamy tomato basil soup hot with the grilled cheese on the side.
