 Creamy Tomato Basil Soup with Grilled Cheese

Ingredients:

  • 2 cups of canned crushed tomatoes
  • 1 cup of vegetable broth
  • 1/2 cup of heavy cream
  • 1/4 cup of fresh basil leaves, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheddar cheese
  • Butter for grilling

  • Pot
  • Skillet
  • Blender
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • In a pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  • Add the crushed tomatoes and vegetable broth to the pot. Bring to a simmer and cook for about 10 minutes.
  • Stir in the heavy cream and chopped basil. Season with salt and pepper. Blend the soup until smooth using an immersion blender or regular blender.
  • For the grilled cheese, butter one side of each slice of bread. Place cheese between two slices, buttered side out.
  • In a skillet, grill the sandwich over medium heat until golden brown on both sides and the cheese is melted.
  • Serve the creamy tomato basil soup hot with the grilled cheese on the side.
