 One-Pan Lemon Herb Chicken and Potatoes

Ingredients:

  • 2 boneless, skinless chicken breasts (about 300g)
  • 300g baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Mixing bowl
  • Measuring spoons
  • Knife
  • Cutting board

Instructions:

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  • Add the chicken breasts to the bowl and coat them well with the marinade.
  • In a baking dish, arrange the halved baby potatoes and drizzle with a little olive oil, salt, and pepper.
  • Place the marinated chicken breasts on top of the potatoes in the baking dish.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
  • Garnish with fresh parsley before serving.
