Ingredients:

  • 200g spaghetti
  • 100g pancetta, diced
  • 50g Parmesan cheese, grated
  • 2 large eggs
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

Kitchen Tools Needed:

  • Large pot
  • Frying pan
  • Mixing bowl
  • Whisk
  • Colander

Instructions:

  • Cook the spaghetti according to package instructions in salted boiling water until al dente.
  • In a pan, heat olive oil over medium heat and add the diced pancetta. Cook until crispy, about 5-7 minutes.
  • Add minced garlic to the pancetta and sauté for 1 minute until fragrant.
  • In a bowl, whisk together the eggs, grated Parmesan, salt, and black pepper.
  • Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
  • Add the hot spaghetti to the pancetta and garlic mixture, tossing to combine.
  • Remove the pan from heat and quickly pour the egg and cheese mixture over the spaghetti, stirring rapidly to create a creamy sauce. If needed, add reserved pasta water to reach desired consistency.
  • Serve immediately, garnished with extra Parmesan and black pepper.
