Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 4 slices of bacon, chopped
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 4 large eggs
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions:

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
  • Add olive oil to the skillet and heat over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
  • Add the diced onion and red bell pepper to the skillet. Cook for another 5 minutes until the vegetables are tender.
  • Stir in the minced garlic and paprika, cooking for an additional minute until fragrant. Season with salt and pepper to taste.
  • Make four small wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 3-5 minutes.
  • Once the eggs are cooked, sprinkle the crispy bacon on top and garnish with fresh parsley before serving.
