Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 4 slices of bacon, chopped
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 4 large eggs
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish

Instructions:
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
- Add olive oil to the skillet and heat over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
- Add the diced onion and red bell pepper to the skillet. Cook for another 5 minutes until the vegetables are tender.
- Stir in the minced garlic and paprika, cooking for an additional minute until fragrant. Season with salt and pepper to taste.
- Make four small wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 3-5 minutes.
- Once the eggs are cooked, sprinkle the crispy bacon on top and garnish with fresh parsley before serving.
